\[\ce{[Fe(CN)6]^{3-}}\] involves d2sphybridisation with one unpaired electron and \[\ce{[Fe(H2O)6]^{3+}}\] involves sp3d2 hybridisation with five unpaired electrons. This difference is due to the presence of strong ligand \[\ce{CN^-}\] and weak ligand \[\ce{H2O}\] in these complexes. Further, greater the number of unpaired electrons, higher would be the magnetic moment values.
