A fat-soluble vitamin, vitamin K helps in the production of several proteins required for blood clotting and bone growth. The liver, brain, heart, pancreas, and bones are just a few of the organs in the body where vitamin K may be found. It decomposes relatively quickly and is eliminated through the stool or urine. It activates calcium and proteins that are necessary for blood coagulation. Green leafy vegetables, such as collard and turnip greens, spinach, kale, broccoli, Brussels, sprouts, cabbage, and lettuces, are good sources of vitamin K. Canola or soybean oil-based salad dressings and enriched meal replacement drinks.
