Solution

Heat, mineral acids, alkalies, and other substances all have a strong effect on proteins. Soluble proteins, such as globular proteins, frequently coagulate or precipitate when heated or treated with mineral acids, resulting in fibrous proteins that are insoluble in water. This coagulation also causes the protein to lose its biological action. This is why coagulated proteins are referred to as denatured proteins. Chemically, denaturation alters the secondary and tertiary structures of proteins rather than the primary structure.
