The three main types of lipids found in foods are:
- Triglycerides: Triglycerides are the most frequent lipid in foods and the body. They are made up of three fatty acids connected to a glycerol backbone. Triglycerides are the most common type of fat in the diet and the body's major storage form of fat. They provide a concentrated amount of energy and vital fatty acids, as well as organ insulation and protection.
- Phospholipids: Phospholipids are structurally similar to triglycerides, with one of the fatty acids replaced by a phosphate group. This results in a hydrophilic (water-attracting) head and hydrophobic (water-repelling) tail, making them necessary components of cell membranes. Phospholipids contribute to the formation of cell membranes' lipid bilayers, which allows cells to maintain their structure and govern the transport of substances into and out of the cell. They also influence cell signaling.
- Sterols: Sterols have a more complicated ring structure than triglycerides and phospholipids. The most well-known sterol is cholesterol, which is found in animal products and created by the body. Sterols are required to create cell membranes, generate hormones (such as estrogen and testosterone), and synthesize vitamin D and bile acids, which improve fat digestion.
These lipids serve important roles in energy storage, cell structure, and other biological functions, making them necessary components of a healthy diet.
