- Canning uses the process of sterilisation.
- It can be used with most foods, including fruits, vegetables, meats, seafood, and some prepared foods.
- First, the food item is inspected, and all extraneous or undesirable materials are removed.
- After blanching, the food is placed in the containers mechanically or by hand, depending on the nature of the product.
- Then, the item is arranged in the can and covered with boiling syrup, juice, or water, up to 11/2 inches of the top.
- Then, the air is removed from the jar so that its internal pressure, after it has been heated and cooled, becomes less than atmospheric pressure.
- This process prevents discolouration and undesirable oxidation effects that may take place in the food product.
- After exhausting the air and/or vapours, the filled cans are permanently sealed by mechanical processes.
- The permanently sealed containers are subjected to temperatures designed to destroy microbiological organisms which are likely to be present on them.
