Wilting happens when the rate of water loss from the aerial parts of a plant significantly exceeds the rate of water absorption by its root system. This rapid loss of water vapour occurs through transpiration. When transpiration is excessive (especially during hot, dry days), the plant cells lose their turgor pressure and flatten, causing the leaves and non-woody stems to lose their rigidity and droop downward.
