Emulsions are prepared by vigorously mixing two immiscible liquids using either a high-speed mixing machine or ultrasonic vibrators, a process known as emulsification. Since the liquids do not mix, a stabilizing agent called an emulsifying agent or emulsifier is added along with the liquids to prevent the dispersed droplets from coalescing and separating. Common emulsifiers include soaps, detergents, proteins, gums, and agar, with soaps and detergents being the most commonly used.
The emulsifier works by forming a protective film around the droplets of the dispersed phase (e.g., oil droplets in water), which decreases interfacial tension and prevents droplet coalescence, thus stabilizing the emulsion.
