Denaturation of proteins occurs when the protein is subjected to physical change (change in temperature or change in pH) which then involves the disruption and possible destruction of both the secondary and tertiary structures. In other words, globular proteins undergo coagulation or precipitation to give fibrous proteins and hence, the native shape and biological activity of the protein is lost.
