The condition produced by aerial oxidation of fats and oils in foods, marked by an unpleasant smell and taste, is called rancidity. Rancidity deteriorates food products composed of fats and oils that have been stored for an extended period, rendering them inedible.
Example:
When a packet of potato chips is left open, the oils in the chips react with oxygen in the air. This oxidation process breaks down the fats, causing the chips to develop a stale, foul taste and smell.
