- Oil-in-water (O/W) emulsion: In this type, oil is the dispersed phase and water is the dispersion medium. For example, milk is an emulsion of liquid fat dispersed in water.
- Water-in-oil (W/O) emulsion: In this type, water is the dispersed phase and oil is the dispersion medium. For example, cod liver oil is an emulsion of water in oil in which water is the dispersed phase and oil is the dispersion medium.
