  • Soft-Ripened Cheese: Characterised by a bloomy, edible white rind formed by fungi and a creamy, soft interior (e.g., Brie, Camembert).
  • Semi-Hard Cheese: Contains less moisture and is aged for a few months, resulting in a firmer texture and sharper flavour (e.g., Cheddar, Gouda).
  • Hard Cheese: Extensively aged for months or years, very low moisture content, granular texture, and a strong, rich flavour profile (e.g., Parmesan, Pecorino).
  • Blue-Vein Cheese: Pierced with stainless steel needles to allow air in, encouraging the growth of Penicillium mould, which creates distinct blue veins and a pungent taste (e.g., Roquefort, Gorgonzola).
