Yeast undergoes anaerobic respiration. In the absence of oxygen, it breaks down glucose to produce ethanol (alcohol), carbon dioxide, and a small amount of energy. This process is called fermentation. However, in the presence of oxygen, yeast can also perform aerobic respiration.
