Emulsions are mainly of two types:

  1. Oil-in-water (O/W) emulsion: Oil is dispersed in water. Examples include milk and vanishing cream.
  2. Water-in-oil (W/O) emulsion: Water is dispersed in oil. Examples include butter and cold cream.

The type of emulsion depends on the nature of the emulsifying agent used.
