Bread wheat (Triticum aestivum) originated through domestication by early humans in the Fertile Crescent region, particularly in the valleys of the Tigris and Euphrates rivers in northern Iraq. It is descended from wild grass species and was selected and cultivated for food around 7,000 B.C., marking one of the earliest domestications of cereal crops. Early man acted as a plant breeder by selecting useful wild species and altering them for cultivation, with wheat being one of the most ancient and important crops cultivated by civilizations such as those in Mesopotamia, Egypt, Greece, and Rome.
