Water-in-oil (w/o) type emulsions are colloidal dispersions where water acts as the dispersed phase and oil serves as the dispersion medium. These emulsions are also called oil emulsions. An example is cod liver oil emulsion, in which water droplets are dispersed within cod liver oil. Emulsions are stabilized by emulsifying agents that prevent the dispersed phase from coalescing.
