At this temperature, gypsum loses three-fourths of its water of crystallisation, forming calcium sulphate hemihydrate, which is POP. If heated above 100°C, it loses all its water, becoming “dead burnt plaster” (anhydrous calcium sulphate) and losing its setting properties.
