Explanation:
The unsaturated fat molecules break down during the oxidation and form volatile aldehydes and carboxylic acids which give the unpleasent rancid taste. This is called oxidative rancidity. It is caused by free radical reaction initiated by light (photo oxidation) or catalysed by either enzymes or metal ions.
