  1. The size of dispersed droplets in emulsions is somewhat larger than the size of dispersed particles in sols.
  2. Emulsions are colloidal systems and exhibit all typical colloidal properties such as Brownian movement, Tyndall effect, electrophoresis, and coagulation.
  3. Emulsions require the presence of an emulsifying agent (emulsifier) to stabilize the droplets by forming a protective film around them.
  4. Without an emulsifier, emulsions are unstable and tend to separate into their constituent liquids.
  5. Emulsions can be broken into their constituent liquids by physical methods such as heating, freezing, and centrifuging.
  6. They can also be broken by chemical methods that destroy the emulsifying agent.
  7. The process of breaking an emulsion to yield the original liquids is called demulsification.
