Explain the term Rancidity.
The condition produced by the aerial oxidation of the oil and fat present in the food material that produces an unpleasant taste and smell. The rancidity is retarded when the food is kept inside the refrigerator since the low temperature does not promote the oxidation reaction.
Rancidity is the process of oxidation of fats and oils that can be easily noticed by the change in taste and smell is known as rancidity.
For example, the taste and smell of butter changes when kept for long.
